HEALTHY RECIPE : HEALTHY PAV BHAJI WITH LAUKI AND CABBAGE
300 GRAM BOTTLE GOURD - DUDHI - LAUKI - BOILED THEN MASH
200 GRAM CABBAGE- BOILED THEN MASH
1/2 CUP GREEN PEAS - BOILED
3 TOMATO - FINELY CHOPPED OR BLENDED
1 1/2 TBSP. GARLIC PASTE
2 ONION FINELY CHOPPED
1 ONION - CHOPPED FOR GARNISHING
1 1/2 TBSP. LEMON JUICE
2 TBSP. CORIANDER LEAVES - CHOPPED
4 TBSP. PEANUT OIL OR SAFFOLA OIL
1/2 TSP. TURMERIC POWDER
2 TBSP. RED CHILLY POWDER
SALT AS PER TEST
PINCH SUGAR
1 1/2 TBSP.BUTTER
1 TBSP. PAV BHAJI MASALA

MASH THE LAUKI AND CABBAGE AND MIX. KEEP ASIDE.
HEAT A OIL IN A NON STICK THICK BOTTOMED PAN.
ADD GARLIC PASTE AND SAUTÉ TILL COOK OVER MEDIUM FLAME.
THEN ADD CHOPPED ONION, MIX WELL AND SAUTÉ TILL TRANSPARENT.
ADD BLENDED OR FINELY CHOPPED TOMATO.
MIX WELL TOGETHER AND COVER WITH LID - COOK FOR 2-3 MINUTES.
ADD TURMERIC POWDER, RED CHILLY POWDER AND PINCH SUGAR. MIX WELL OVER SLOW FLAME.
THEN ADD GREEN PEAS, LAUKI - CABBAGE MIXTURE TOGETHER IN IT.
ADD SALT AND PAV BHAJI MASALA AND MIX WITH IT.
MIX WELL TOGETHER NICELY AND STIRRING CONTINUOUSLY TILL DONE.
ADD BUTTER.
ADD LEMON JUICE AND MIX.
SERVE IN A SERVING PLATE, GARNISH WITH CORIANDER LEAVES AND SOME BUTTER.
SERVE WITH BREAD SLICES AND TOMATO - ONION SALAD.
