HEALTHY RECIPE : RAJ KACHORI CHAT
3 POTATO BOIL THEN DE SKINNED AND CHOP
1 CUP CHICKPEAS - BOILED
1 CUP MUNG - BOILED
2 ONION -FINELY CHOPPED
1 CUP BESAN BUNDI
1 CUP BESAN NYLON SEV
2 CUP CURD-BLEND WITH SALT, JEERA POWDER AND BLACK SALT AS PER TEST
3 TBSP. MINT CORIANDER GREEN CHUTNEY
2 CUP DATES AND TAMARIND SWEET CHUTNEY
2 TBSP CORIANDER LEAVES - CHOPPED
1 TSP. JEERA POWDER
1 TSP. BLACK SALT
1 TSP. CHAT MASALA

FOR DOUGH :
1 CUP SOJI
1 TBSP. MAIDA
1 TBSP. MELTED GHEE
DRINKING SODA WATER - AS NECESSARY TO KNEAD DOUGH

MIX A SOJI, MAIDA AND MELTED GHEE IN A MIXING BOWL,
KNEAD A MEDIUM CONSISTENCY - OF DOUGH WITH DRINKING SODA WATER.
WRAP THE DOUGH WITH COTTON CLOTH FOR 20 MINUTES.
MAKE 10 -11 SAME PORTION TO MAKE BALLS.
ROLL OUT ALL THE BALLS AND MAKE RAJ KACHORI -PURI.
DEEP FRY IN OIL ON MEDIUM FLAME TILL LIGHT BROWN OR CRUNCHY.
KEEP ASIDE TO COOL.
NOW STUFF THE RAJ KACHORI WITH ALL INGREDIENTS ONE BY ONE.
TAKE ONE PURI AND MAKE ONE HOLE ON UPPER LAYER OF PURI.
FIRST STUFF THE MUNG, THEN CHOPPED POTATO, CHICKPEAS, BESAN NYLON SEV, BESAN BUNDI.
THEN POUR A GREEN CHUTNEY, SWEET CHUTNEY. AND SPICY CURD.
SPRINKLE THE BLACK SALT, CHAT MASALA AND SOME SALT, BESAN SEV, SOME BUNDI AND CORIANDER LEAVES OVER IT FOR GARNISH.
SERVE IN A PLATE.
