HEALTHY RECIPE : VEG CORN EGGPLANT






















300 GRAMS EGGPLANT CHOPPED

150 GRAMS CORN KERNELS - BOILED

1 POTATO SLICES

1 TOMATO - CHOPPED

1 ONION  - CHOPPED

1.1/2 TBSP. OIL

 1 TBSP. GARLIC - PASTE

5 CLOVES 

1 BAY LEAVES TAJ PATTA

1 ANISE STAR - BADIYAN

1 TSP. CUMIN SEEDS

1.1/ 2 MUSTARD SEEDS

1 TSP. TURMERIC POWDER

1 TBSP. RED CHILLI POWDER

1 TBSP. DHNIYA JEERA POWDER

SALT AS PER TASTE

1/2 TBSP. JAGGERY

1/2 TBSP. GARAM MASALA

1/2 TBSP. LEMON JUICE

1 TBSP.CORIANDER LEAVES - CHOPPED




















HEAT A OIL IN A PRESSURE COOKER.ADD TAJ PATTA, CLOVES, BADIYAN, CUMIN SEEDS, MUSTARD SEEDS.


WHEN THEY CACKLE, ADD ONIONS, GARLIC PASTE, TOMATO AND TURMERIC POWDER.
MIX WELL TOGETHER.


















NOW ADD RED CHILLI POWDER, DHANIYA JEERA POWDER AND JAGGERY, GARAM MASALA AND SALT. MIX WELL.


















NOW ADD CHOPPED EGG PLANTS, POTATO SLICES AND BOILED CORN KERNELS.


















MIX WELL TOGETHER.



ADD 1  TO 1.1/2 CUP OF WATER. AND MIX.


PRESSURE COOK OVER MEDIUM FLAME TILL 4 WHISTLE.
THEN REMOVE FROM FLAME N OPEN THE LID. 
ADD LEMON JUICE AND CORIANDER N MIX SLOWLY.
GARNISH WITH CORIANDER ONION, TOMATO AND CURRY LEAVES.
SERVE HOT WITH PARATHA ROTI AND PUREE.
